What's the best way to set up parental controls on iphone for my kids?

My kids (9 and 12) just got iPhones and I want to lock down apps, web content, and in-app purchases without making it a huge pain for them (or me). I’ve poked around Screen Time and Family Sharing but I’m not sure what settings actually matter day to day. What’s the simplest setup that still lets me set limits, approve downloads, and see what they’re doing?
